The wine was matured for 12 months in a combination of old French oak barrels and stainless steel. The wine has a pale lime colour with a slight golden hue, a fruit forward nose of green apples, pear and quince with hint of ginger and honeycomb. The palate is full and rich with a mineral core and refreshing finish.
Panko crumbed fish, with lemon and a fresh green salad.
100% Marlborough, Upper Wairau Valley.
The fruit was harvested at maximum flavour as assessed through frequent tasting in the vineyard by our winemaker. It was very gently pressed to avoid harsh phenolic extraction and allowed the juice to cold settle. The clear juice was fermented at low temperatures using a range of yeast renowned for their ability to enhance the Sauvignon Blanc aromas. A balanced amount of residual sugar was left in the wine to complement the acidity and to add palate weight and structure.
Classic tropical fruit and herbal notes have been derived from the careful selection of various areas of our best River Terrace vineyard blocks in the Upper Wairau Valley. The full flavours and tight structure of the palate reflect the intrinsic quality of the Wairau Valley vineyards. The wine has a broad spectrum of flavours, from ripe tropical through gooseberry, which is supported by a refreshing acidity and perfectly balanced residual sugar.
Strong Indian & Asian spices
Pleasing fruit aromas of white peach, litchi and pear. Fruit-forwardness follows on the palate with an abundance of fresh lemon, limes and green apple complimented by good textural viscosity and weight. The linear acidity cleanses the palate, keeping the natural sugars in perfect balance creating a brilliantly refreshing wine that can mature beautifully.
Roast leg of lamb
The wine was matured for 27 months in a combination of 225, 300 and 500L French oak barrels. 10% new wine was added to the balance which is 5-8 years old.
The wine shows notes of black currant, ribena, dried herbs and cured meats The palate is light and elegant with flavours of cherry, oaksmoke, black fruits and savoury spice. Best served a 16-18°C and will benefit from decanting in the first 3-5 years.

Brilliant ruby red in color, on the nose this wine offers scents of red fruits, plums, and violets. Also evident are notes of blond tobacco, graphite, damp underbrush, and toasty notes. On the palate, it is pleasantly refreshing, with elegant and balanced tannins that leave a long finish of toasted and bitter cacao notes, which come from ageing in wood. Will age well for eight years or more

Eekhoring is Afrikaans for "squirrel", and an exciting new collaboration between Red Squirrel Wine and the talented guys behind De Kleine Wijn Koöp in Stellenbosch, South Africa. It's predominantly Chenin Blanc, with an eclectic cocktail of alternative varieties, mostly from the Swartland and from vines up to 38-years-old. The grapes were fermented in a mixture of stainless steel and old oak barrels. It has the hallmarks of the great Chenin-based Cape white blends: a textural, multi-layered, crisp, with floral aromas, some beeswax, then plush stone fruit on the palate, finishing dry and long. Definitely a wine of which you should always have a few bottles squirrelled away!

Chicken Supreme, Shrimp Risotto
Almost colourless with bright yellow reflections. Very attractive nose with lost of tropical fruit guava, granadilla and some citrus. Bright and fresh in the mouth with lively action across the palate. All the flavour the nose promised with hint of pineapple and some lemon. Good, brisk acidity gives balance to the ripe tropical flavours. Refreshing finish.

Cinsaut, Syrah, & Pinotage
Eekhoring is Afrikaans for "squirrel". It's a Cape blend of from the Swartland, made in a relatively light-to-medium bodied sort of style. It had a very light press, giving it just enough 'grip', not too much. Think of it like a soft, flavourful minute steak just lightly seared, with a few good cracks of black pepper. Not a shy retiring type, but most certainly a red of the 'session' sort. Only a few thousand bottled produced in this debut vintage.

Delicate red berry character, some delightfully fine tannin and a wonderfully long, clean finish.
